Prep Time: 10 minutes
Cook Time: Approximately 20–25 minutes
Total Time: Approximately 35 minutes
Servings: 4
Difficulty: Easy
Ingredients
For the Chicken
600–700 g boneless, skinless chicken thighs (approximately 4–6 pieces)
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ teaspoon paprika
For the Cranberry Orange Glaze
½ cup (125 mL) freshly squeezed orange juice
2 teaspoons NatriHealth Freeze-Dried Cranberry Powder
1 tablespoon honey or maple syrup
1 tablespoon low-sodium soy sauce
1 teaspoon Dijon mustard
2 garlic cloves, finely minced
1 teaspoon finely grated orange zest
¼ cup (60 mL) water or low-sodium chicken broth
1 teaspoon cornstarch mixed with 1 tablespoon cold water, if needed for thickening
Optional Garnish: Fresh parsley, thin orange slices, or a little extra orange zest.
Instructions
Prepare the chicken. Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, and paprika.
Make the cranberry orange glaze. In a small bowl, whisk together the orange juice, cranberry powder, honey, soy sauce, Dijon mustard, garlic, orange zest, and water or chicken broth. Stir until the cranberry powder is evenly incorporated.
Sear the chicken. Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for approximately 4–5 minutes per side, until lightly golden. The chicken does not need to be fully cooked at this stage.
Add the glaze. Reduce the heat to medium-low and pour the cranberry-orange mixture into the skillet. Gently stir the sauce around the chicken, scraping up any browned bits from the bottom of the pan.
Simmer until cooked through. Cover and simmer gently for approximately 6–10 minutes, depending on the thickness of the chicken. Turn the pieces occasionally so they become evenly coated. Cook until the thickest part of each piece reaches an internal temperature of 165°F (74°C), measured with a food thermometer.
Thicken the glaze. Transfer the cooked chicken to a clean plate. If the sauce is too thin, stir the cornstarch mixture once more and add a little at a time to the simmering sauce. Cook for approximately 1–2 minutes, stirring, until glossy and lightly thickened.
Taste and adjust. Taste the glaze. Add a small amount of honey if it is too tart, or a splash of orange juice if you prefer a brighter citrus flavour.
Finish and serve. Return the chicken to the skillet and turn each piece in the glaze until evenly coated. Garnish with parsley or orange zest and serve warm.
Tips for the Best Results
For tender chicken: Boneless chicken thighs are a good choice because they remain relatively juicy during skillet cooking. Avoid boiling the sauce aggressively, which may cause the chicken to become tough.
For balanced flavour: Cranberry powder can be quite tart. Start with the recommended amount, then adjust the sweetness after the sauce has reduced.
For a smooth glaze: Whisk the cranberry powder into the liquid ingredients before adding the sauce to the skillet. This helps prevent clumping.
For a glossy finish: Allow the sauce to reduce gently. Add the cornstarch mixture only if needed, as the sauce may naturally thicken during cooking.
For a beautiful presentation: Serve the chicken over warm rice and spoon the remaining glaze over the top. Finish with a little orange zest for colour and aroma.
Substitutions
Chicken breast: Boneless chicken breast can be used instead of thighs. Adjust the cooking time according to thickness and cook to an internal temperature of 165°F (74°C).
No honey: Use maple syrup for a slightly different sweetness.
Gluten-free: Replace regular soy sauce with a certified gluten-free tamari, and check the mustard and other packaged ingredients.
Less sweet: Begin with half the honey and adjust after tasting the finished glaze.
What to Serve with Cranberry Orange Chicken
Steamed rice: A simple accompaniment that absorbs the sweet-tart glaze without competing with its flavour.
Roasted potatoes: Golden roasted potatoes pair well with the citrus and garlic notes.
Green vegetables: Steamed broccoli, green beans, or roasted asparagus offer a fresh contrast.
Couscous: Light, fluffy couscous works well for a quick dinner, especially with a little parsley and orange zest.
Storage
Allow leftovers to cool slightly, then refrigerate promptly in a shallow, airtight container at 4°C (40°F) or below.
Enjoy within 3–4 days. Reheat thoroughly to an internal temperature of 165°F (74°C), adding a small splash of water if the glaze has thickened in the refrigerator.
Do not leave cooked chicken at room temperature for more than two hours.
